OAK HONEY
Oak honey is one of the honeydew honeys, that is, it is produced from the secretions of melliferous insects that parasitize the bark of the oak tree.
Taste: It is not particularly sweet, it has a special taste, rich and full.
Color: It is usually a dark-colored honey.
Crystallization: It crystallizes with difficulty due to its properties.

PINE HONEY
It constitutes 65% of the total honey production in Greece and comes from the honeydew secretions of the insect Marchalina hellenica, when it parasitizes the Aleppo and Trachea pines.
Taste: Due to the low concentration of sugars, it is not too sweet.
Aroma: Special. Some liken it to the aroma of iodine.
Color: The color of pine honey is characteristic and darker than thyme. In fact, that produced in the spring is lighter and clearer than that produced in the fall.
Crystallization: The crystallization of pine honey occurs at a fairly slow rate, since its natural glucose content is low. More specifically, pure pine honeys remain liquid, that is, without crystallizing, for more than a year and a half.

THYME HONEY
It is considered to be of excellent quality honey. It belongs to the flower honeys, but in reality it is a separate category due to its intense aromatic and taste characteristics. Its production amounts to approximately 10% of the total honey production in Greece.
Taste: Thyme honey has a pleasant taste, but sometimes, due to its high fructose concentration, it leaves a burning sensation in the mouth.
Aroma: Intense due to the ethereal aromas of thyme.
Color: Usually light amber. (Thyme honey from Attica and the Cyclades is lighter than thyme honey from Crete, which is dark orange.)
Crystallization: This particular type of honey sugars over a period of 6-18 months.

ORANGE HONEY
Orange honey is an important source of nectar for the production of honey. It is a honey that children like very much because of its very sweet and aromatic taste.
Taste: Extremely special taste.
Aroma: Intense, wonderful aroma.
Color: Characteristic clear orange.
Crystallization: It crystallizes very quickly, so it is best to consume it within a short period of time.
