It is estimated that approximately 5% of the honey produced in Greece is fir. “Vanilla” fir honey belongs to the category of honeydew honeys, that is, it comes from the sap that bees ingest with the help of some insects that parasitize plants – in this case, the parasite physokermes hemicryphus found on fir trees. This honey stands out for its amber color and the fact that it never crystallizes, as its sugar content is lower than in other types of honey and is limited in production. Multi-layered but mildly sweet due to low natural sugars, with notes of caramel.
